{"id":71782,"date":"2023-09-07T11:15:05","date_gmt":"2023-09-07T04:15:05","guid":{"rendered":"https:\/\/malahayati.ac.id\/?p=71782"},"modified":"2023-09-21T01:51:49","modified_gmt":"2023-09-21T01:51:49","slug":"inovasi-dosen-universitas-malahayati-ubah-kulit-pisang-jadi-kerupuk-kulipang-ini-manfaatnya","status":"publish","type":"post","link":"https:\/\/malahayati.ac.id\/?p=71782","title":{"rendered":"Inovasi Dosen Universitas Malahayati Ubah Kulit Pisang Jadi Kerupuk Kulipang, Ini Manfaatnya"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-72045\" src=\"https:\/\/malahayati.ac.id\/wp-content\/uploads\/2023\/09\/WhatsApp-Image-2023-09-21-at-08.50.21.jpeg\" alt=\"\" width=\"770\" height=\"499\" \/><\/p>\n<p><strong>BANDAR LAMPUNG (malahayati.ac.id):<\/strong> Lampung, salah satu daerah penghasil pisang terbesar di Indonesia, telah menghadirkan inovasi yang menarik dalam upaya peningkatan nilai gizi makanan lokal.<\/p>\n<p>Masyarakat Lampung umumnya mengkonsumsi buah pisangnya saja, sementara kulitnya seringkali dibuang sebagai limbah.<\/p>\n<p>Namun, penelitian terbaru telah mengungkapkan bahwa kulit pisang mengandung berbagai nutrisi berharga seperti karbohidrat, protein, lemak, vitamin, mineral, dan senyawa antioksidan.<\/p>\n<p>Dwi Marlina Syukri, S.Si., M.BSc., PhD selaku Dosen <a href=\"https:\/\/malahayati.ac.id\/2023\/07\/31\/universitas-malahayati-bandar-lampung-bentuk-tim-mentor-analisis-stunting\/\">Universitas Malahayati<\/a> Bandar Lampung yang juga ketua tim peneliti telah berhasil mengubah kulit pisang menjadi bahan tambahan yang berharga dalam pembuatan kerupuk Kulipang.<\/p>\n<p>Hasil penelitian menunjukkan bahwa kerupuk Kulipang memiliki kadar protein sebesar 0.24%, tidak berbeda secara signifikan dari kerupuk udang sebagai kontrol (p &gt; 0.05).<\/p>\n<p>&#8220;Selain protein, kerupuk Kulipang juga kaya akan kalsium, zat besi, vitamin B &amp; C, serta antioksidan tinggi,&#8221; kata Dwi.<\/p>\n<p>Dwi Marlina Syukri menjelaskan, Inovasi ini tidak hanya meningkatkan nilai gizi kerupuk, tetapi juga memiliki dampak positif dalam mengurangi limbah kulit pisang, memberikan dorongan ekonomi, dan mengembangkan penggunaan bahan pangan lokal untuk pasar global.<\/p>\n<p>&#8220;Kerupuk Kulipang memiliki potensi sebagai bahan makanan yang dapat membantu mencegah berbagai masalah kesehatan, seperti stunting dan kanker, berkat kandungan gizi yang tinggi dari kulit pisang,&#8221; ucapnya.<\/p>\n<p>Inovasi kerupuk Kulipang berbahan kulit pisang menjadi contoh nyata bagaimana pengolahan limbah dapat menjadi peluang untuk meningkatkan nilai ekonomi dan kesehatan masyarakat lokal.<\/p>\n<p>Tim peniliti diantaranya, Dwi Marlina Syukri, S.Si., M.BSc., PhD selaku ketua, dan anggota diantaranya, Dr. Mala Kurniati, S.Si., M.Biomed, Dr. Tessa Sjahriani, dr.
